2009 Sally's Paddock Release

We are happy to announce the release of the 31st Vintage of Sally's Paddock with the 2009 bottling.

This powerful wine has a clear Ruby Violet colour with a tinge of purple. Distinctive legs as usual.

The fresh berry aromas have a definite cigar box background with some Rose and Violet floral notes. Some lifted spice and cherry aromas are evident as well.

Definite, balanced and fine palate, fresh and tasting of berries but overall wine flavoured. Subtle and complex new wood flavours are well integrated. Some dark cherry flavours on the front palate. The middle palate is “wine” all the way with lingering complex savoury flavours but more fresh fruit characters than the previous vintages. Fine grained natural tannins. Very long soft clean finish with hints of spices and a lovely aftertaste. This wine is deceptively soft, as usual with Sally's Paddocks at this stage, and will mature beautifully for at least 20 years.

We have released it a month late because the fabulous Spring season has involved a lot more vineyard work. The seasonal tasks of dis-budding, slashing and cultivating were much diminished during the drought, and now the seasons seem to have returned to normal, we are remembering what the full work load was like!

We are very happy to been given a “Distinguished” rating in the Langton's Classification of Australian Wine for the 5th Time. (Now 20 years on). This places Sally's Paddock as one of the top 123 wines, and one of the top 15 Cabernet Blends in Australia. Click here for more information.

Preserving Figs

My Mum's Recipe for Preserving Figs.

12 lbs Fresh Figs ripe but not breaking up.

12 lbs Sugar

6 Pints water.

4 Lemons

1/4 lb Ginger (Green)

Boil sugar and water then add juice of Lemons and roughly chopped green Ginger

drop in Figs - boil 1.5 to 1.75 hours - take out and place Figs on ceramic dish bum down.

Pour some of the syrup over them and leave for 2 - 3 days then place on wire racks in sun for 4 - 5 days.

These finish between glace and dried fig. Delicious with cheese.
Use left over syrup on pancakes, topping on ice cream, with blue cheese etc.

Everyone here at Redbank Winery are very pleased to release the 2009 Sally's Hill Pinot Noir.

Tasting Notes:

Rather full, bright, Ruby colour.
The aromas of violets and dried flowers dominate fresh, slightly earthy notes showing the extended wood maturation in Puncheons.
The fresh lively flavours also taste of concentrated fruit. This Pinot has a sophisticated middle palate which is intense in flavour, yet elegant, warm and silky in style. The lifted end flavours and rounded tannins showing in the medium length finish give an overall impression of balance to this excellent Pyrenees Pinot style.
May keep well in the long term, but I recommend drinking in the next couple of years.

Macaroni Cheese

My Mum's Macaroni Cheese

1 cup Macaroni
1/2 cup grated cheese
2 cups white sauce
salt, pepper, cayenne, chopped parsley
Sprinkle Macaroni into large saucepan half filled with salted boiling water. Boil until tender (15-20 mins). Drain and pour boiling water over to remove starch and separate.'
Stir the grated cheese into white sauce, season to taste.
Mix Macaroni into cheese sauce, pour into greased fireproof dish. Top with layer of grated cheese and breadcrumbs.
Brown in oven and garnish with chopped parsley.

Roasting chestnuts

Anyone staying staying in Chestnut Cottage can roast their own chestnuts at this time of year. These are Spanish Chestnuts from the tree behind. They are small but very tasty. Kept me alive (with some Sally's Hill Chardonnay) while I was hot smoking some Pyrenees lamb late in the day.
